So I told you in my last post about making homemade country fried steak. Well I have that recipe to share, along with a few others!
Country Fried Steak
Ingredients:
Cubed steak
Flour
Egg
Milk
Season Salt
Salt & Pepper
First in a bowl mix together 2 eggs and 2 tablespoons milk. Also add a little S&P and Season Salt. Mix together until egg is beaten and it is all combined.
Second on a plate pour some flour, S&P and Season Salt. Just eyeball the flour, if you need to add more later its fine...just make sure you add a little more seasoning to it also.
Third dip your Cubed Steak in the egg, using one hand as your wet hand, and place in the flour and use the other hand as the hand to flip it around in the flour. Using one hand for each helps your fingers to not get all gross with egg and flour stuck to them. Shake off access flour, and either place in your frying pan that is filled with oil. The oil should come half way up the steak when you put it in there...dont fill the entire pan with it. If you have a deep fryer you can also use that. Once you have battered all the steak, and fried them up set the aside.
How to make homemade Gravy
Using your pan drippings from what you cooked the steak in. If there is alot of grease left in your pan, go ahead and pour some of it out....you dont need to much of it, maybe a couple tablespoons.
First add about 2 table spoons to your grease and wisk together until it is combined has made a paste. Then add milk...use as much as you need depending on how much gravy you want to make. If the gravy is to thin add some more flour and grease, if it is to thick add more milk. During this process turn your temp on med-high and let it start boiling, when it starts to boil reduce heat to low. Add S&P to taste.
Mashed Potatoes
Ingredients
Potatoes
Milk
Butter
Sour Cream
S&P
First cut your potatoes in small cubes...this will allow them to cook faster. Bring water to a boil adding a bit of vegetable oil so the water doesnt boil over. Also add some salt to the water, just for flavoring. Once the water is boiling add your potatoes. Boil until they are fork tender, then drain and add back to the pot. Turn temp down to med. Using a hand masher or hand mixer mash your potatoes until they are as creamy or lumpy as you like them. Add milk, butter, sour cream and s&p until they have the desired taste and texture to your liking. If you werent fixing these with your steak, you could ever add cheese and bacon for some loaded potatoes :)
Homemade Mac n Cheese
Ingredients:
Elbow Macaroni
Block Sharp Cheese
Milk
Butter
Flour
Salt and Pepper
Season Salt
First bring your water to a boil, making sure to add oil and salt to it. Boil your pasta until they are cooked but have a slight bite to them. Drain and let sit. In the same pan you cooked your pasta melt some 2 tablespoons butter and mix in 2 tablespoons flour. Mix together until they form a paste. Then pour in milk, wisking to get all the lumps out. The temp should be on med-high...bring the mixture up to were it starts to boil then reduce it to med-low. Add your cheese, as much as you want. Stir until all the cheese is melted and the sauce is thickened. Now add your pasta and mix in, trying not to break the noodles. Now add some S&P and season salt. Mix and then it is all ready to serve.
I recently made this with bacon..using the bacon grease instead of the butter, and then crumbling the bacon in at the end and it was amazing!
